Let’s Talk Turkey!

This week we have learned a valuable lesson at Chez Peady.

If you chop it up and put it on the table, they will eat it.

It doesn’t matter the time of day or meal in question.

If it is cut up into bite sized pieces and there’s maybe a little veggie dip, salsa, guacamole, or hummus for dipping the veggies will vanish.

I forgot! The Things are such great eaters they will try anything I make and usually without complaint because, as I have talked about before, I do make sure there is at least one thing that everyone likes for sure, but I am not a short order cook and I do not make extra meals, special meals or meals made to order.

Though, not too long ago I was dreaming of having a fully functional buffet brunch bar with waffles made to order, an omelette chef, a mountain of fresh fruit, and a great bottomless cup of coffee, for myself. This is a fantasy. This is not a hotel. It is a nice dream though.

So, knowing brunch was not going to appear magically* and really not feeling like a bacon-and-eggs brunch, I decided the cure for this breakfast break was to roast a turkey for dinner and roast a turkey I did!

I pretty much let the Things and Daddy-O fend for themselves** all day with no regularly scheduled meals – at all – until dinner. 

Yup.

I couldn’t help it. I had a one turkey-track mind.

Ever since Thanksgiving, I have been thinking about next Thanksgiving. Luckily for me, I don’t have to wait until next year. I only have to wait until American Thanksgiving***.

I am so excited that we celebrate both Thanksgivings for all kinds of reasons, but I’d be misleading you if I didn’t divulge right now that one of the main reasons is for the turkey – and all the fun fixings.

For Canadian Thanksgiving we are usually not at home, so we don’t get to have any of the fun leftovers the following week. The hot turkey sandwiches drenched in gravy with yummy leftover mashed potatoes, carrots, and turnip**** on the side. The double decker club sandwiches with crinkle cut fries and gravy. The amazing turkey soup made lovingly by using every single scrap of leftover turkey. All delightful in their own rights and treats one really misses when one isn’t in charge of roasting the main course!

For American Thanksgiving we are almost always at home. When the Things were smaller I used to call in “festive” so they would have the day off school. Yes. Really. I would quite literally call the school and leave a message on the answering machine or speak to our lovely Administrative Assistant (in Ottawa) and happily explain, “It’s American Thanksgiving and we are calling in festive!”. It was very freeing actually and I think it gave the person listening to the message a laugh, on what was otherwise a random Thursday in November – which if you have never been to Ottawa – can be quite grey and cold. I hope it brought joy. It certainly brought me a lot of joy. We would stay home and I would roast a turkey and we’d watch the Macy’s Thanksgiving Day Parade and have a grand time! A scrumptious turkey dinner on a weeknight is very happy making, indeed. I love the fact that some American television stations televise Miracle on 34th Street or It’s a Wonderful Life right after the parade on American Thanksgiving Day. Pretty much, it’s the perfect end to a very happy day.

I mean, who could deny the beauty of a day designed to celebrate the joy of a bountiful harvest with family? Throw in the fact that it is a super excuse for an extra thankful Thursday and another roasted turkey and well.. SOLD! 

So, with all of this in mind – and the fact that fresh turkeys were on sale – I went out and bought one to roast today.

I regret nothing!

It was scrumptious.

We had turkey, mashed potatoes, carrots, turnip, corn, stuffing, fresh rolls and gravy.

And the best part is that, if we want we can have it all over again tomorrow because LEFTOVERS! (Yay!)

Now, I really must finish this post, so I can get the CrockPot fired up because while we are sleeping magical slow cooker elves will be making the base for an amazing batch of turkey soup. (Also, yay!)

Sweet Sunflower Snacks (A Pictorial Snack Tutorial)

Did you know you can cut an apple almost all the way through, pop out the core, let the flower petals fall open, then add a dollop of peanut butter and a few mini chocolate chips, to make a delicious and nutritious sunflower?

You can!

Isn’t that fun? It is a favourite around here, especially in Fall, when the Nova Scotian apples are at their absolute best. Delicious!

Easy, right?

Totally.

You can use what you like best, of course, but I tend to use a Golden Delicious Apple, Natural Peanut Butter*, and gluten free mini chocolate chips. You only need a few chocolate chips. They are chocolate chips! They seem to have a magical power over kids. If they find 2 in a mini muffin they’re thrilled, so I just go with what I have worked so hard to achieve. Happiness!

Look!

It’s a teeny tiny Thing 2 enjoying a Sweet Sunflower Snack a few years ago! Aww! 

This small Corelle bowl might be the ideal serving dish for this snack. Notice how it helps the apple slices keep the flower shape, while containing the Peanut Butter? That’s better than the larger plate for presentation. (Though the larger plate was best for an after school snack with extra Things!) I also like the mix of white chocolate and dark chocolate chips here. It seems more flower-like, to me.

*Of course, if you have a peanut allergy you can use another nut butter or a soy butter in its place. Still yummy!

Best Laid Plans

Hello!

I planned the bajoopees out of last week and you know what? For the most part it really helped me. It also helped my family, though they might not realize it, because you know fairies and elves do most of the things around here. Just like at your place, right? (Ooooohhh! Maaaaagiiiiic.) 

It was a crazy-busy week and some events I hadn’t even accounted for popped up then happened and I would absolutely have been flailing had I not put a basic plan in place last Sunday.

I intended to pop in and blog a few times throughout the week, but I simply couldn’t squeeze in any time for myself. 

Now, don’t go getting all “but you said” on me. I eeked out some time for myself, of course, because that is essential to health, happiness and – let’s just tell it like it is – sanity. Plus, I put it right into the plan. Which is brilliant, if I do say so myself. (And I do!)

I said I would walk more and I did.

I said I would drink my required amount of water (Every. Single. Day.) and I did.

I said I would go to a new fitness class and I did AND it was awesome!

Dinners were planned out and written on my snazzy chalkboard menu*, but were late every single night (except for Monday and Thursday) and some were even swapped out for better (or more convenient) choices on the crazy-busiest nights. The beautiful thing about a meal plan is that what you think might work on a Tuesday might just work better on Wednesday and since you planned and shopped, etc. you can easily adjust to suit your needs in the heat of the moment. Whew!

Frankly, I’m impressed. There was nothing different about last week except for the fact that I really made an effort to plan, to tell you about my plan, and then actually followed my plan.

It works!

So much so, that I did it again.

I have a few things that will carry over week after week and a few new things that need to be done, but the basic plan is in place and I can fill in gaps as the need arises.

I even have my menu for the week. That’s a huge help, plus it saves a lot of money when you shop once with a plan in mind. I highly recommend it.

Now, this week will be different for me in a lot of ways because, as I said, last week was cah-ray-zee-busy and this week has fewer Spring Fairs and Coffee Houses for instance, but it also has a lot more car maintenance. Blech. I mean, really. It’s life, though, right? There’s always going to be something pressing to get done. All the more reason to plan**.

I will make time for the important things (and Things!) like I always do and I have a bit of a new adventure I am embarking on, plus I really want to try and blog every day in June. Is that insane? It might be a little bit insane. I am giving myself until noon tomorrow to decide. I’ll let you know***.

Define Decadent

Here is a picture of yesterday’s lunch.

 

1/4 cup frozen blueberries

3/4 cup plain Greek yogurt

1 tablespoon shelled hemp seeds

1/2 tablespoon maple syrup

All in one happy making, old fashioned, ice cream shoppe, parfait dish.

 

I’m here to tell you it was decadent.

That is all.

Something Good

This* is the best thing I have done for myself in more than a week.

Winter is hard.

I am trying to kick myself in the bum, but my feet don’t go that way, so I might need an intervention by way of a virtual butt kicking.

*This is a smoothie made with water, 1/4 c frozen blueberries, 1 scoop protein powder. I used my Hamilton Beach single serve blender to, well, blend it.

Meatless Monday (More or Less)

In 12 minutes Meatless Monday will turn into Taco Tuesday and before that happens I need to share an official Meatless Monday meal with you.

In the interest of joining in on a movement that takes some very nice steps towards sustainability for our planet, I have decided that we at Chez Peady will be taking part in Meatless Monday on a regular basis.

I have been thinking about it for a while and with a storm brewing in the Atlantic Ocean and creeping up the coastline, today seemed like the perfect day to start. I had absolutely no desire to fight the crowds of storm chips shoppers at the grocery store and since Thing 2 was home from school today (still fighting the most recent bug – such a hanger on, this one!) it made sense to just stay put and shop my own pantry.

Still, when I did that I was not quite feeling inspired, so in typical Peady fashion I took to twitter to ask my tweeps (the coolest tweeps, fyi) for Meatless Monday ideas.

As usual, the Twitterverse did not disappoint.

I went off to hang out with Thing 2 and when I returned there were no fewer than  7 suggestions for delicious, nutritious, make-it-right-now, ideas for Meatless Monday.

How cool is that?

I knew for tonight, I wanted an extremely easy dish, but one that was also big on flavours and appealing to Thing 1 and Thing 2. Pasta seemed a logical choice. I went to the kitchen to gather the goods, so that when suppertime rolled around I could simply work my Peady Powers and whip up supper in no time flat.

Decision. Action.

What did I come up with? Well, I made Gluten Free Spaghetti in Tomato Sauce with Chickpeas and Parmesan. I also made some oh-my-goodness-it-smells-so-good Cheesy Garlic Bread to go along with it.

If there’s one thing I know about my family, it’s that garlic and cheese bring these people joy. Throw that cheesy, garlicky goodness onto a carb and well, stick a fork in them, they’re done!

It was a hit!

It could not have been easier.

Here’s what I did. (I promise, soon there will be a pretty recipe plug-in here to make things more organized. Thank you for your patience.)

Boil water for Pasta (add a bit of salt)

While the pasta water is coming to a boil, make a simple tomato sauce by sautéing some diced onion and some garlic in olive oil, add sweet bell peppers (diced, whatever colour or combo of colours you like), add a can of diced tomatoes, S & P to taste, and let the sauce reduce while you cook your pasta. (or open a jar of your favourite sauce!) (remember KISS!)

Cook pasta.

Open a can of Chickpeas. Call them Garbanzo Beans. Laugh. FOCUS!

Strain the Chickpeas and rinse under cool running water*.

Drain cooked pasta.

Add sauce to the empty stock pot (this is where I cooked the pasta).

Add the Chickpeas.

Add the pasta.

Toss to coat everything well.

Add a bit of Parmesan cheese and stir it in. (fresh shredded oh-my-goodness-why-is-it-so-expensive, isn’t necessary in this particular case)

Add a pinch of dried oregano (or a nice handful of fresh if you have it -yum!)

Serve immediately or cover it and make some yummy garlic cheesy bread.

Like this.

Turn oven to 375 degrees.

Slice carb of choice (bread, rolls, what have you) and place on a baking sheet.

Spread a bit of butter on the bread and sprinkle liberally with garlic powder.

Cover the garlicky, buttery, carb with shredded cheddar cheese**. (A combination of marble cheddar and mozzarella is also popular here.)

Bake until the carb is toasty and cheese has melted.

Serve immediately***.

 

It was really good and totally meatless! I do believe that is what the people like to call a win-win.

I would make this again. In fact, I will.

Next Meatless Monday, I will make a new recipe thanks to all the helpful tweeps who were so sweet and generous with ideas this morning.

I will post our Meatless Monday experiences for the next little while as we try something new and see if we can’t make Meatless Monday a regular thing at Chez Peady.

 

 

*Rinsing canned beans in this way can reduce the sodium content by about 40%. Always rince canned beans. You could also cook your own from dried. Another post for another day.

MYO Pizza: KISS Edition

We have had a lot of event filled weekends this Fall and, as a result, have fallen out of our Friday Family Fun Night rituals.

Last weekend we were away from home (again!) and when we arrived home on Monday after an exhausting drive on a very foggy, driving snowy, blowing snowy, swirling snowy, rainy snowy, SNOWY snowy, Cobequid Pass, we decided that we would reinstate the Friday Family Fun Night tradition and have a weekend of very nearly zero obligations.

We are trying to keep it simple, remember?

In keeping with the manifesto, I made a very simple plan.

MYO Pizza – which everyone loves!

To make it even simpler, I made all the pizzas using ready made pizza crusts.

 

The Things shared this happy-making Pepperoni & Cheese pizza.

 

 

Daddy-O chose a more classic Pepperoni & Cheese with veggies (red pepper, red onion, mushroom).

 

I was very excited to try the Kinnikinnick ready made gluten free crusts that friends in the know suggested.

 

I am thrilled to report that the pizzas turned out great and that the crusts themselves are quite delicious.

 

It’s really nice to know that I have a viable option for those nights when I just need to keep it simple.

Yummy!

Mine had the Kinnikinnick crust, pepperoni, mozzarella cheese, red pepper, red onion, mushroom, pickled jalapeño slices, and gluten free turkey sausage.

It was glorious!

 

 

After everyone had full tummies it was time for us to settle in with the evening’s planned entertainment. We opted to skip a movie in lieu of the excellent Bullying Awareness schedule on the Family Channel.

The cast of “The Next Step” hosted the evening and introduced some of our favourite shows – “Austin & Ally”, “Girl Meets World”, and “The Next Step” – all of which were featuring bullying storylines tonight as a part of their Stand UP to Bullying campaign. All three shows led to much discussion about friendship and bullying and how important it is to stand up and speak up and to never, ever be a bystander.

We especially loved “Girl Meets World“. It is so well written and I love how they keep managing to tie “Boy Meets World” storylines and characters into the show. It’s just so well done!

The Popcorn Pix feature presentation was another trip into bullying territory, with “Contest”. It was very good, but pretty harsh in many ways, as well. Very serious subject matter, obviously, and they hinted at some very heavy elements of being the bullied one. Overall it was very good. Definitely not for the younger ones. Thing 2 is 8 and she was snuggled up pretty close the whole time. Still though it’s such an important topic and we really cannot talk about it enough. No one can. Keep talking!
