Totally Terrific Taco Tuesday

 

Were there tacos?

Was it Tuesday?

Of course there were tacos!

We really do have tacos a lot at Chez Peady. It’s okay though because everyone loves them.

We have tacos every week. Typically on Taco Tuesday, but if we miss a Tuesday we have been known to have a Taco Wednesday or Friday. See also, Sunday through Saturday. I mean really, is there a day when tacos are not a good idea? No. I don’t think so.

I have pretty patient people in my family, especially when it comes to food, so they are on board with my plan to never grow bored with Taco Tuesdays!

That’s why I often change up the topping ingredients and even the kind of tacos we have.

We’ve had fish tacos, beef tacos, turkey tacos, chicken tacos and vegetarian tacos and each of those can have a variety of toppings and healthy additions, such as chickpeas or black beans. Every time I change something up they eat it up. No complaints. I love these people. Seriously.

 

Today, I was very busy* trying to play catch up with life (and Twitter, foolishly!) after a weekend away, the added stress of Parent-Teacher interviews last night, grocery shopping had to get done, and I also knew I would have an extra Thing after school today, which was great, but I had to get stuff done, you know? So I was not feeling fancy. Not at all.

I was feeling all apologetic as supper was being prepared because it was going to be a pretty plain Taco Tuesday. (I mean, sometimes Taco Tuesday gets pretty awesome, ’round here!)

Thing 2 was sitting at the table (Doing a science experiment. As one does.) and I mentioned that it wasn’t going to be a very fancy meal.

She said, “You mean we are just having plain tacos?”

“Yes.” I replied as I popped the taco shells into the oven.

“Like, just beef and nothing else?”

“Yeppers**.”

 

She sounded more than okay with that, so I turned to confirm and she had the biggest, happiest, smile on her face.

She was positively giddy at the idea of simple tacos.

Then Thing 1 joined in with, “I love plain tacos! You mean there’s no beans in there?”

Nope. No beans.

“Yay!”

They were so happy to have plain tacos.

Simple.

Kids really get it.

I hope someday I will be as wise as they are.

 

I try so hard to keep things simple, I really do, but every now and then I am so thankful to be reminded why.

 

Why do adults complicate things?

Do you ever find yourself in a situation – that by it’s very nature is simple – and you somehow have to make it more complex?

Do grown ups all have some odd Rube Goldberg syndrome?

Chrysanthemum! As Fun to Spell as it is to Say. C-H-R-Y-S-A-N-T-H-E-M-U-M.

Today was a good day.

Despite the fact that Thing 1’s trumpet book was missing, searching high and low was netting zero results, and I had pretty much resigned to the fact it was never going to be seen again.

It felt like a day for getting things done and since I had the car, had some errands to run, and some ingredients to restock, I headed to Costco.

I think that Costco on a Tuesday morning is your best bet. As compared to, say, Saturday – Oh! I see! This *is* the apocalypse – Tuesday was alright.

I typically put my budget blinders on as I walk through the door and focus on the needs (as opposed to the wants). Today was no different, though the list of needs was long, so it took some time to get out of there.

I promise I can justify every single thing that went into my cart. My splurges were a few gluten free ingredients so I can be well prepared for this journey of mine.

Splurges.

That is a weird word. It’s also weird that I consider basic ingredients to be splurges. Maybe it’s the sheer volume of stuff inside Costco. I’d like a bulk sized bottle of Lemon Juice. Sure I would, but I don’t want two. Where the heck would I put it?

It just feels so … so … excessive. It is weird, isn’t it? (But I digress …)

So, basics were covered (including the awesome chicken that went into our Taco Tuesday dinner!), meal plan ingredients were procured, and I completely avoided certain parts of the store.

Who does that?!

Me.

Again. Weird.

Actually, maybe it’s less weird and more practical… possibly even wise.

 

Then I caught sight of the Mums.

Did you know I was on Mum Watch? True story.

I have been looking for the giant Costco Mums since August. I am sure that when I was in Ottawa, if I waited until September I was out of luck! So, I am not exaggerating when I tell you I was thrilled to see so many beautiful Mums just waiting to come home with me. So, I did what any wise woman, who just so happens to be trying hard to remember to put herself on her own priority list, would do.

I bought two!

 

Safety first!

 

 

 

Tuesday was shaping up.

I came home and put everything away. Revved up the CrockPot. Put the giant Mums outside. Turned the pots. Turned them again, so they would be putting their best Mum foot forward. It was a sunny day and I felt very happy I went with my gut instinct and chose YELLOW*. It was a good choice. So pretty!

 

And then, as luck would have it, I went with my gut instinct, again, and found Thing 1’s Standard of Excellence Trumpet Book.

It was wedged between his dresser and the wall of the closet (which is where the dresser lives) because of course!

I went into the closet to assess the mess and before my heart completely stopped I saw the teeny corner of pink paper and my brain said, “Wait! Don’t die from the shock of the mess just yet. I think that is something.” (Thanks, brain! So specific of you.)

So, I reached down and pinched that little pink corner and whipped out “The King of Pride Rock“. No, no, *not* Mufasa, silly! The sheet music from band.. from last year… which is always tucked inside the trumpet book and ZOMG! THE TRUMPET BOOK!

YAY!!

Okay! I am done** with Tuesday! It’s been excellent and frankly, I do not want to tempt fate by asking for a single thing more.

VICTORY!

How sweet it is.

Today’s sky and sun and my new Mums.

 

Now, what kind of payback can I come up with to make sure this never happens again? Thing 1 owes me. I can’t get my time back, but I am sure there’s a life lesson*** in this whole scenario.

I’m taking suggestions.

 

*Well YELL is right in there, so you have to!

**Nope. I managed to get dinner going, go for a walk with my NS BFF, and just before bedtime took the jammified Things for a little drive to return library books and DVDs we had borrowed. The last time I returned DVDs, this happened. Tonight we saw a fawn. So beautiful! It’s been a lovely day.

*** For all of us.

Yay! I get a taco!

Does everybody know what day it is?

Nope. It’s not Friday. Sorry, Jeni.

Nope. It’s not Monday. That was yesterday’s problem.

That’s right! It’s Taco Tuesday!

Taco Tuesday is on regular rotation at Chez Peady and we always enjoy it. Sometimes the tacos are fancy, with my scrumptious – if I do say so myself – (and I do!) homemade guacamole. Sometimes it’s as basic as following the directions on a taco kit (name brand or otherwise). Sometimes they are filled with beef. Other times it’s chicken. Slow cooked or roasted. Simple and delicious. Even fish tacos are a hit ’round here! We just love tacos.

We try to change it up a little bit each time, so that we don’t grow tired of our Taco Tuesday tradition. There’re so many ways that a simple meal can be made interesting, and tacos are perfect for customization. From the fillings to the shells, to the toppings and the sauces, there’s a myriad of ways to make tacos – and to make them fun!

Tonight’s beef tacos were awesome! Nothing too fancy, but the ingredients were fresh, everyone was looking forward to dinner together, and everything turned out just right.

 

I think next Taco Tuesday we’ll try a vegetarian version made with Chickpeas. I know Thing 1 and Thing 2 will give them a try and very likely will enjoy them.

They’ll try anything! They’ve yet to turn up their noses at a single taco trick. From Beer Battered Haddock to Spaghetti*, from beef to books about the topic, I say “Tacos!” and they say “Si!” How lucky are we?
