Thankful Thursday: American Thanksgiving Edition

Happy American Thanksgiving Day!

I know it’s late, but I have been busy celebrating.

It went pretty much according to plan, except we didn’t eat any pie! That is a travesty!

I have a friend in Texas who hosted a 100% pie Thanksgiving today. How amazing is that?!?

And here we are stuffed like the turkey with no room for pie. Oh! The shame!

We’ll have to train harder for next year.

In the meantime, my unending quest for awesome American side dishes (You know they are amazing, right? Oh, you really must go read my post!) I asked my very best imaginary friend, Sheila (Hey Sheila!) for a recipe to share with you and being the awesome friend that she is she came up with this gem!

Sheila’s Corn Casserole
Shoepeg corn, 2 cans, drained
French cut green beans, 1 can, drained
Sour cream, 8 oz.
Slivered almonds, small pkg.
Chopped onion, half – whole (depending on your tastes)
Ground pepper, to taste
Grated cheddar cheese, sharp or mild,
1-2 cup Cream of something** soup (celery, mushroom or chicken.)
Mix it all up in a casserole dish sprayed with Pam
Topping
Tube of Ritz crackers, crushed.
Stick of butter, melted.
Blend crackers and melted butter and spread mixture on top of casserole.
Cook 350 for approximately 30 minutes, until bubbly and top is browning.
(Brown to your liking.)

Ta daa!
I am definitely making this side dish next year.

It’s late and I must sleep because Friday will be a very busy day.

I want to tell you a bit more about our Thanksgiving dinner conversation with Thing 1 and Thing 2, but it will have to wait until I have a bit more time. I wish I could tell you right now! I assure you I will share as soon as I can.

Everyone Needs To Know

It’s been a long time and the whole “no one needs to know” thing worked for nearly 20 years, but the time has come.

The jig is up.

Everyone needs to know what a sweetheart my husband is.

EVERYONE!

We have weathered a number of storms and we even had a few close calls with actual tornadoes when we lived in Austin, Texas (Stay weird, y’all! It’s so beautiful on you.), but we have been together for almost 20 years and even though we both would like to change approximately one million things about each other on a daily basis (as every married couple will NOT tell you – Hah! Hi! Have you met me? We tell the truth ’round here. All you have to do is ask or not ask, as it were.) we wouldn’t change a single thing.

On our first date we went to the movies to see “Twister”. Yup.

I own a copy on Blu-ray. OH YES I DO!

You want proof?

See? (Also, please look at that gorgeous blue sky! That is happening in real life right now in Bedford, Nova Scotia. I am so thankful. We were beginning to forget what blue sky looked like ’round here. Hopefully this is the start of summer v. 2.0 because v. 1.0 has been a doozie thus far. Time to upgrade!)

Anyway, where was I? Oh yes! First dates. This was ours and though to some people it might seem like a really bad omen to go to a disaster movie about a divorcing couple on a first date – and furthermore to move to a city in a state where actual tornadoes happen – clearly we fear nothing, because it’s been great!

Twister will always have a very special place in my heart.

Consider this song. We did almost nothing in it in the traditional sense of having the “whole darn thing”, but we have a little girl, a little boy, a tall, dark (haired), handsome man and we are all still busy making big plans. We have thus far survived the storms of life – though we almost never go chasing them on purpose – and we are happy.

What more could we possibly want?

Okay. Okay. Maybe, if you are pressing, we would all love a little Benji (or Lassie, or Corky, or WishBone, or Murray) to call LeRoy, but on that point, no one needs to know right now.

 

Happy Cinco de Mayo!

Today is Cinco de Mayo and at Chez Peady, this celebration of Mexican heritage, originating with The Battle of Puebla*, also kicks off “Tex-Mex Week”.

It is a favourite tradition of Thing 1 and Thing 2 and we look forward to it all year long.

We have a fairly varied diet and, since I regularly meal plan, there’s a lot of opportunity to try new food and taste yummy things from a variety of cultures.

Hands down? Mexican food and Tex-Mex win!

You already know we have Taco Tuesday in regular rotation (read: every single week until the end of time), but you might be interested to know that we also throw lots of different Mexican (or Tex-Mex) meals into the mix every now and then, too.

Right now, my main concern is that *you* might not celebrate Cinco de Mayo (or even know what it is!) and worse, that you might not have dinner plans for today!

I simply can’t have that! (Controlling, wot?)

So, though I will elaborate later tonight and throughout the week, my mission is clear.

YOU need a “Tex-Mex Week” menu.

Thursday needs a kick in the pants!

And so do I!

Butt Kick. Swift.

You might be surprised how often Calvin & Hobbes could be credited with giving me the best life advice and spiritual guidance.

Remember way back* in the beginning of this blog how I swore I’d be better. I’d be kinder to myself and I would improve my life in as many ways as possible, not the least of which being my fitness level and over all health? Mmm hmm.

Easier said than done**.

My feet have been rather stOOpid*** of late and that has made walking difficult – forget any attempt at a C25k program which I really, really want to do. I have decent shoes, I have orthotics, I am really good about remembering to stretch before starting my day. Despite my best efforts and plans, my left foot is being a complete and utter jerk. It hurts. A lot.

So much so, that I have not walked, for fitness sake, with my NS BFF all week. Not good.

But that’s no biggie, you might be thinking, there are LOTS of things you can do for exercise without your feet.

It’s true. There are.

Have I been doing those things? No. No I haven’t.

I have been having a bit of a pity party. “Pity? Party of one?” *raises hand* Ugh.

It happens. It’s okay. I’m over it. It’s time to kick into gear.

Thank goodness I have friends who support and love me – just the way I am.

Thank goodness I have a husband who loves me, laughs at my jokes, tolerates the awful puns and always makes me feel like I can do whatever I want (even when I am not so sure).

Thank goodness both of the above have wicked awesome senses of humour and willingly share their own “funny ha ha” as often as possible.
